Bone marrow doesn’t seem like the most appetizing thing to eat but many cultures use it as the core ingredient of their dishes: the Vietnamese “pho;” the Indian “nali nihari;”and in Mexico, “tuetano” is used in tacos and tostadas.

One of the best food trips you can make back in the Philippines is to go to Tagaytay on a chilly night and enjoy a steaming bowl of bulalo—utak and all—with kalamansi and patis on the side.
