Kaldereta by Gel Santos-Relos

Beef Kaldereta ala Gel Santos Relos

Ingredients:

3 lbs beef cubed
1/4 cup soy sauce
juice of 4 calamansi
1/2 cup liver spread or liverwurst
about 1 lb polska kielbasa or chorizo de bilbao sliced
1/4 cup extra virgin olive oil
4 T minced garlic
1 cup chopped onions
1 15-oz can tomato sauce
1 14.5-oz can petite diced tomato
1/4 cup sundried tomato julienne cut
16-oz bottle roasted red bell pepper julienne cut
one cup pitted medium green olives
one cup pitted medium ripe black olives
one cup red wine
1-2 cups beef broth as needed
1 t red pepper flakes
6T Worcestershire sauce
one cup grated parmesan/romano/asiago cheese
6 dried bay leaf
1/2 t dried oregano
1 t dried basil
salt and pepper to taste

Cooking Directions:

1. Marinate beef cubes in toyo and calamansi for at least 3 hours in the refrigerator.
2. Heat Caldero or Dutch Oven or any thick-bottomed pot.
3. When pan is heated, add olive oil and put down heat to medium low.
4. Saute garlic until light golden brown. Add onion and saute until transparent.
5. Add red pepper flakes to add heat and kick.
6. Put up heat to medium high and add marinated beef cubes. Saute until color turns light brown, just mixing occasionally. Add salt and pepper.
7. Mix in chorizo or polska kielbasa and liver spread. Allow juices to caramelize at the bottom of the pan.
7. De-glaze pan by pouring in the red wine. Put heat to high and let the wine reduce. Scrape the caramelization at the bottom of the pan to get all the flavors get incorporated in the sauce.
8. When wine is reduced, add tomato sauce, diced tomato, sundried tomato, bay leaf, oregano, basil, Worcestershire sauce, and beef broth to cover meat. Let boil uncovered.
9. When boiling point is reached, mix a little, then cover pot with lid. Lower heat to medium low and let simmer for one hour.
10. Take off lid and add in olives and roasted red bell peppers and stir. Cover with lid and let simmer for 25 minutes or until beef is tender.
11. Take lid an stir in grated cheese. Cover lid for another 10 minutes.
12. Take lid off and stir in parsley.Add salt and pepper to taste. Let simmer for another two minutes.
